Easy Mapo Tofu
Servings: 2

INGREDIENTS
300 grams tofu, cubed
1 tablespoon sesame oil
1 teaspoon grated ginger
1 teaspoon grated garlic
100 grams ground pork
1 tablespoon sake
1 tablespoons soy sauce
1 teaspoon red pepper flakes
1 tablespoon white miso
green onion, finely chopped
200 milliliters water
1 teaspoon chicken stock powder
tablespoon water mixed with tablespoon cornstarch
1 tablespoon chile oil

PREPARATION
Bring a medium pot of water to a boil over high heat. Add the tofu cubes and boil for 1 minute, then drain and set aside.
Heat the sesame oil in a large pan over low heat. Add the ginger and garlic and cook for 2 minutes, until fragrant.
Increase the heat to medium, add the ground pork, and fry for 2 minutes, until golden brown. Add the sake, soy sauce, red pepper, and miso and stir to combine. Add the green onion and stir to incorporate.
In a liquid measuring cup or small bowl, mix together the water and chicken stock powder. Add to the pan and bring to a boil, then add the tofu, reduce the heat to low, and cook for 3 minutes to warm through.
Remove the pan from the heat, add the cornstarch slurry, and stir gently. Return the pan to low heat and gently mix until the sauce thickens. Drizzle over the chile oil.
