TURNIP CARPACCIO
Servings: 2

INGREDIENTS
2 medium turnips
teaspoon kosher salt, plus more to taste
50 grams sliced prosciutto

Dressing
1 tablespoon olive oil
tablespoon vinegar
teaspoon grated garlic
Black pepper, to taste

PREPARATION

1. Remove the turnip stems and set aside, then peel the skin from the turnips. Slice into 2-millimeter thick rounds.
2. Add the turnip slices to a medium bowl and toss with the salt. Let sit for 10 minutes, then pat dry with paper towels.
3. Dice the reserved turnip stems. Add to a medium bowl, season with salt, and let sit for 10 minutes.
4. Make the dressing: In a small bowl, combine the oil, vinegar, garlic, and pepper. Whisk well.
5. Arrange the turnip and prosciutto slices on a serving plate. Top with the turnip stems. Drizzle with the dressing.
