Brown Sugar Bubble Milk Tea
Servings: 2

INGREDIENTS
30 grams black tapioca pearls
250 milliliters water, plus more for soaking
80 grams brown suger
400 milliliters milk
Ice cubes, for serving

PREPARATION
Add the tapioca pearls to a large bowl with plenty of water and soak for 6-8 hours. Drain.
In a small pan over high heat, combine the water and brown sugar, and bring to a boil. Once boiling, add the tapioca pearls and simmer for 10-15 minutes, until soft.
Divide the tapioca pearls and sugar syrup between 2 glasses. Tilt the glasses to coat the sides with the syrup.
Pour in the milk, then add ice cubes. Serve.
