Mentaiko Mashed Potatoes
Servings: 2

INGREDIENTS
100 grams potatoes, diced
10 grams butter
1 teaspoon grated garlic
200 grams shredded mozzarella cheese
60 milliliters heavy cream
40 grams mentaiko (spicy cod roe)
Chopped fresh parsley, for garnish
Sliced baguette, for serving

PREPARATION
1. Add the potatoes to a medium bowl and cover with plastic wrap. Microwave at 600W for 4-5 minutes, until tender.
2. While they are still hot, mash the potatoes.
3. Melt the butter in a medium skillet over low heat. Add the garlic and saut for 30 seconds, until fragrant. Add the shredded cheese and heavy cream and stir until melted and smooth, about 5 minutes.
4. Add the mashed potatoes and stir well to fully incorporate, then add the mentaiko and stir to combine.
5. Garnish with parsley and serve with baguette for dipping.
