Mr. Yabatans Special Inari Sushi
Makes 8 pieces

INGREDIENTS
4 aburaage (fried tofu)
300 milliliters dashi stock
2 tablespoons soy sauce
5 tablespoons sugar, divided
2 tablespoons mirin
2 cups cooked sushi rice
1 teaspoon salt
50 milliliters rice vinegar

Optional Toppings
Boiled shrimp
Shiso leaves
Salmon roe
Sliced cucumber
Thinly sliced tamago
Pink fish floss
Edamame
Shibazuke pickles

PREPARATION
1. Roll over the aburaage with a chopstick to separate the layers inside. Cut in half crosswise. Carefully open the tofu from the cut side to make pouches.
2. Bring a large pot of water to a boil. Add the tofu pouches and boil for 3 minutes to remove excess oil. Drain and pat dry.
3. In a large pot, combine the dashi stock, soy sauce, 2 tablespoons of sugar, and the mirin. Stir to combine and bring to a boil over medium heat.
4. Add the tofu to the broth. Lay a parchment paper lid directly on top of the tofu and simmer for 20 minutes, until the broth is reduced by half. Remove from the heat and let cool.
5. Add the rice to a large bowl. In a small bowl, combine the remaining 3 tablespoons sugar, the salt, and rice vinegar. Stir to combine, then add to the rice and mix well.
6. With wet fingers, shape the rice into 8 cylinders.
7. Carefully stuff each rice cylinder into a tofu pocket, tucking the edges of the tofu around the rice.
8. Garnish with your toppings of choice.
9. Enjoy!
