Strawberry Whoopie Pie
Servings: 6

INGREDIENTS
40 grams unsalted butter, room temperature
50 grams granulated sugar
beaten egg
100 grams flour
2 grams baking powder
50 milliliters milk
1-2 drops red food coloring

Filling
150 milliliters heavy cream
1 tablespoon granulated sugar
6 teaspoons strawberry jam

Matcha Icing
3 tablespoons powdered sugar
1 teaspoon matcha
2 teaspoons water

White Icing
3 tablespoons powdered sugar
1 teaspoon water

PREPARATION
Preheat the oven to 350F (180C).

In a large bowl, add butter and granulated sugar and mix well. Add 1/4 beaten egg and combine. Add the rest of the beaten egg and fold to combine.

Sift in the flour and baking powder. Fold until well combined.

Add milk and red food color and mix well.

Fill piping bags fitted with a round tip with the mixture.

Pipe 1 -inch dollops onto a parchment paperlined baking sheet. Smooth out any peaks caused by piping with a wet fingertip.

Bake for 10 minutes.

Make the filling: In a large bowl, add heavy cream and granulated sugar and whisk until soft peaks form.

Make the white icing: Sift the powdered sugar into a medium bowl. Add the water and whisk until smooth.

Make the matcha icing: Sift the powdered sugar into a medium bowl. Add the matcha and water and whisk until smooth.

Fill piping bags fitted with a round tip with the whipped cream filling.

Pipe the filling around the edge of one whoopie pie and add strawberry jam in the center. Cover with another whoopie pie. Repeat with the other whoopie pies.

Decorate with icing.
