Souffle Cheesecake

INGREDIENTS
100 milliliters milk
4 slices of cheese
3 eggs
40 grams sugar, divided
50 grams pancake mix
Butter
Granulated sugar
Hot water
Powdered sugar

Special equipment
4 ramekins

PREPARATION
1. Preheat the oven to 350F(180C).
2. Pour milk in a small bowl, add sliced cheese, tearing it with your hands.
3. Microwave for 1 minute and 30 seconds at 600W. Mix until fully combined.
4. In a medium bowl, combine the egg yolks and 20 grams of sugar.
5. Pour cheese mixture in a little at a time. Add pancake mix and mix well.
6. In a separate bowl, whisk egg whites until firm peaks form, then add the remaining sugar in two parts, whisking well in between.
7. Gently fold the egg whites into the pancake mixture in three parts and stir until fully incorporated.
8. Grease the ramekins with butter and coat with granulated sugar. Pour mixture into the ramekins.
9. Place the ramekins in a baking pan and pour hot water into the pan until it reaches 2cm.
10. Bake for 15-20 minutes.
11. Top with powdered sugar.
