Chocolate Mint Tarts

INGREDIENTS
Filling
100 grams bitter chocolate
50 milliliters heavy cream
100 grams cream cheese, room temperature
30 grams sugar

Mint Whipped Cream
100 milliliters heavy cream
1 teaspoon sugar
teaspoon blue food coloring
teaspoon mint liqueur

6 biscuit bases
1 cocoa biscuit, crumbled, for topping

PREPARATION
1. Make the filling: In a bowl, add the chocolate and heavy cream and heat in a microwave at 600W for 1 minute. Mix until smooth.
2. In another bowl, mix together the cream cheese and sugar. Add the chocolate mixture and stir until smooth, then put it in a piping bag.
3. Pipe the filling onto the biscuit bases.
4. Make the mint whipped cream: In a bowl, add heavy cream, sugar, food coloring, and mint liqueur and blend with a hand mixer until stiff peaks form.
5. Pipe the whipped cream onto the tarts, then sprinkle crumbled cocoa biscuits on top.
