Here is what you'll need!


Oven baked chicken breast curry & mashed potatoes with curry flavor
Servings: 2

INGREDIENTS
200g chicken breast
1 teaspoon honey
2 tablespoons mayonnaise
1/4 cup grated parmesan cheese
1/4 teaspoon garlic powder
1/4 cup panko breadcrumbs

100g potatoes (bite-size pieces)
10g butter
80ml heavy cream
80g shredded cheese

1 teaspoon curry powder
Some parsley

PREPARATION
1. Poke chicken breast with a fork and remove excess fat and skin. Rub honey on chicken and let it rest for 5 minutes.

2. Preheat the oven to 220C (428F). Mix powdered cheese, garlic powder, and panko breadcrumbs in a bowl. Spread mayonnaise on the chicken breast and put breadcrumbs mixture. Bake the chicken in the oven for about 20 minutes until golden.

3. Put potatoes in a bowl and plastic-wrap it loosely. Microwave for 3 minutes at 600W.

4. Mash potatoes while hot. Add butter.

5. Heat shredded cheese, heavy cream, and curry powder in a pan until all cheese melts. Add mashed potatoes (4).

6. Place the chicken and mashed potatoes on a plate. Top with some parsley.

7. Enjoy!
