Rich Pumpkin Tart

Servings: 6

INGREDIENTS

Pie Crust
120 grams flour
1 Egg yolk
60 grams Unsalted butter, room temperature
30 grams Sugar

Filling
300 grams Pumpkin, peeled and cut into bite size pieces
100 milliliters Fresh cream
1 Egg yolk
40 grams Sugar

Whipped cream
150 milliliters Fresh cream
20 grams Sugar

PREPARATION
1. Coat the tart mold with butter and sprinkle with a light coat of flour.

2. Make the tart dough. In a big bowl, knead the butter with a rubber spatula until soft. Add the sugar and knead until it becomes lighter in color.

3. Add the lightly beaten egg yolk, pouring 2 to 3 times, mixing well in between pours.

4. Sift the flour and mix to incorporate. Wrap the dough in plastic wrap and let it rest in the fridge for 30 min.

5. Preheat oven to 180C.

6. Use a rolling pin to stretch the dough to a thickness of 2-3mm and transfer it to the tart mold. With the dorsal side of a finger, firmly push the stretched dough along the indentations of the mold to attach it to the sides. To prevent the dough from bursting, make small holes on the bottom of the tart with a fork.

7. Place a cooking sheet on top of the dough and bake it in the oven at 180C for 15 minutes. Let it cool down after baking.

8. Make a filling. Preheat oven to 170C.

9. Place the pumpkin in a bowl and loosely cover it with plastic wrap, heat in the microwave at 600W for 6 minutes. Use a fork to mash the pumpkin while hot.

10. Add sugar and mix to incorporate. Add egg yolk and mix again. Add fresh cream and mix until smooth.

11. Pour (10) into the cold tart mold and bake in the oven at 170C for 40 minutes. Let it cool down after baking.

12. Make whipped cream. Add heavy cream and sugar to a big bowl, whisk until horns form. Place in a piping bag with a round tip.

13. Pipe the whipped cream on top of (11) to complete!
