Tarbuj Ke Chilke Ki Sabzi Watermelon Rind Curry Sanjeev Kapoor Khazana

In almost a jiffy, this outer rind of the watermelon turns into a wonderful sabzi. You can brag about how good you are with sustainable cooking now.

TARBUJ KE CHILKE KI SABZI

Ingredients

1 medium watermelon
2-3 tbsps oil
1 tsp cumin seeds
2 tbsps chopped garlic
1 tbsp chopped ginger
2 green chilies, finely chopped
2 medium onions, finely chopped
tsp turmeric powder
1 tsp red chilli powder
tsp coriander powder
tsp cumin powder
Salt to taste
1 tbsp lemon juice
1 tsp sugar
2-3 tbsps chopped fresh coriander leaves


Method

1. Thickly peel the watermelon, remove the outer skin. And cut the white part into 1 inch pieces, wash them well.
2. Heat oil in a nonstick pan; add cumin seeds, garlic, ginger, chilies and saut till garlic turns golden brown. Add onions and cook till translucent.
3. Add turmeric powder, red chilli powder, coriander powder, cumin powder, salt and saut for a minute.
4. Add watermelon rind and mix well. Add cup water, cover and cook on medium heat for 10-15 minutes stirring in between.
5. Add lemon juice, sugar, coriander and mix well. Cook for a minute.
6. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
