Tapas Molecular Gastronomy - BBQ Pork Cigars | Japanese Eats

With only eight seats, our one-Michelin starred Tapas Molecular Bar offers an exclusive dining experience celebrating the art of innovative molecular cuisine.

This video captures one of the courses, called "Cigar". The cigar is made of a rolled potato tuile on the outside, and stuffed with BBQ duck and vegetables on the inside. The "ash" dip is made of white sesame. The cigar is cherry wood smoked to give it a very distinct and delicious flavor.

Situated within the chic Oriental Lounge on the 38th floor, Tapas Molecular serves a range of delicious dishes in the traditional sushi-bar style, complemented by magnificent views stretching out towards the Imperial Palace and Shinjuku district. Over the course of two hours, a team of talented chefs will prepare bite-sized delicacies right before your eyes, creating new texture and flavour combinations to stimulate both the imagination and the palate. Limited to an intimate group of only eight people per seating, it is the ultimate gourmet experience.
