Using one whole chicken breast, butterflied and flattened out, and your biggest frying pan, this recipe marinates and seasons fried with the right amounts of sweet and spice. For extra rich flavours, like the XXL Chicken Cutlets from Hot Star or Shihlin Taiwan Street Snacks, marinate the chicken breasts overnight.

Psst, the best part of making this at home is altering the seasonings to your liking - want it spicier? Add more chilli powder. Want it with more pepper? Knock yourselves out.

1 cup sweet potato starch
cup cornstarch
tsp salt
1 tsp sugar
Oil for deep frying

Marinade:
cup light soy sauce
2 tbsp rice wine
1 tbsp sugar
1 tsp five spice powder
tsp white pepper powder
1 tbsp minced garlic
1 tsp sesame oil

Seasoning powder:
tsp five spice powder
1 tsp garlic powder
tsp white pepper powder
1 tsp chilli powder (optional and adjust to preference)
