Tahiri | Sanjeev Kapoor Khazana

Fragrant rice preparation with lots of fresh vegetables.

TAHIRI

Ingredients

1½ cups basmati rice, soaked and drained
5-6 small potatoes, peeled and halved
12-16 cauliflower florets
½ cup green peas
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
10-12 cloves
10-12 black peppercorns
2-3 black cardamoms
1 inch cinnamon
1 bay leaf
2 medium onions, sliced
½ teaspoon turmeric powder
1½ teaspoons red chilli powder
1 teaspoon cumin (jeera) powder
Salt to taste
Fresh coriander sprig for garnishing

Method

1. Heat oil in a deep non-stick pan. Add cumin seeds and let the seeds change colour.
2. Add cloves, peppercorns, cardamoms, cinnamon, bay leaf and onions, mix and sauté till onions turn translucent.
3. Add potatoes and cauliflower florets and mix well. Add turmeric powder, chilli powder, cumin powder and salt and mix.
4. Add sufficient water, mix, cover and cook for 5-6 minutes. Add rice and mix.
5. Add green peas and mix well. Add 3 cups water, stir to mix, cover and cook till fully done.
6. Garnish with coriander sprig and serve hot.
