Taco Stuffed Avocado
Ingredients:
1 lb. ground beef, grass fed
1 tsp. Salt
2 tsp. Ground cumin
2 tsp. dried Oregano leaves
cup tomato sauce
cup water
1 tsp. Garlic powder
2 tsp. Ancho chile powder
2 Tbsp. Extra light olive oil
2 cups cauliflower rice
onion, diced
1 bell pepper, diced
Garnishments:
Cherry tomatoes
Shredded cheddar cheese
Sour cream
4-5 avocados

iceberg lettuce, chopped

Directions:

To a large frying pan add 2 tablespoons of olive oil and heat over medium high. Add the onion, bell pepper, cauliflower rice, and give it a stir. Then add the ground beef and break it up into small pieces with a spatula or wooden spoon. Cook until the ground beef is done and no longer pink.

If you notice an excessive amount of grease in the pan, place a lid on the pan and drain the grease out into a cup. Do not pour the grease down the drain or you will plug up your sink and you will not like me. :)

Next add the spices to the hamburger including the ancho chile powder, ground cumin, garlic powder, oregano, salt, tomato sauce, and the water. Stir all the ingredients together and heat it through say 4 to 5 minutes.

Now you are ready to put this together. Slice the avocados in half and remove the seeds. Scoop out some of the avocado before filling with the meat mixture so you have more room for filling.

Set this avocado aside for making guacamole, smoothies or even back on top of your stuffed avocado. If you are making these ahead of time you may want to brush lemon or lime juice over the avocado flesh. This will keep it from turning brown due to oxidation.
Take a slotted spoon and fill the avocado with the beef mixture mounding it up on the avocado half. Garnish with sliced cherry tomatoes, a sprinkle of lettuce and cheese followed by a a good drizzle of the apple cider vinegar dressing. Finish this off with some sour cream.
