TABBOULEH Ingredients½ cup broken wheat1 cup fresh parsley2 spring onion bulbs, finely chopped2 medium tomatoes, finely chopped¼ cup chopped fresh mint leaves1 tablespoon chopped spring onion greens 1 tablespoon lemon juice1 tablespoon sumacSalt to taste2 tablespoons olive oilMethod1. Soak broken wheat in water and set aside. 2. Finely chop parsley on a chopping board. 3. Mix together chopped parsley, spring onion bulbs, tomatoes, mint leaves, spring onion greens, lemon juice, sumac, salt, olive oil and broken wheat in a bowl. 4. Serve.
