Tabbouleh | Sanjeev Kapoor Khazana

A popular Middle Eastern vegetarian recipe, Tabbouleh is a Lebanese salad that is the perfect accompaniment.

TABBOULEH

Ingredients

½ cup broken wheat
1 cup fresh parsley
2 spring onion bulbs, finely chopped
2 medium tomatoes, finely chopped
¼ cup chopped fresh mint leaves
1 tablespoon chopped spring onion greens
1 tablespoon lemon juice
1 tablespoon sumac
Salt to taste
2 tablespoons olive oil

Method

1. Soak broken wheat in water and set aside.
2. Finely chop parsley on a chopping board.
3. Mix together chopped parsley, spring onion bulbs, tomatoes, mint leaves, spring onion greens, lemon juice, sumac, salt, olive oil and broken wheat in a bowl.
4. Serve.
