Crispy sweet potato tikkis served in a bite size sliders, served with an amazing mango chilli sauce. SWEET POTATO SLIDERS Ingredients2 cups boiled and grated sweet potatoes4 slider buns, halved and toastedMango Chilli Sauce as required1 medium onion, finely chopped¼ cup finely chopped mixed coloured capsicums2 tbsps finely chopped fresh parsley leaves½ tsp smoked paprikaSalt to tasteCrushed black peppercorns to taste½ tsp red chilli flakesDried bread crumbs as requiredCorn flour slurry as requiredOil for deep fryingMayonnaise for drizzlingPickled onion roundels as required4 cheese slices1 small English cucumber, vertically slicedCherry tomatoes for garnishsMethod1. Take sweet potatoes in a large bowl. Add onion, capsicums, parsley, smoked paprika, salt and crushed black peppercorns and mix till well combined. Add red chilli flakes and mix. 2. Take small portions of the mixture and shape each portion into a ball and gently flatten to shape like tikkis.3. Dip the tikkis one at a time into the corn flour slurry and coat with dried bread crumbs. 4. Heat sufficient oil in a kadai. Gently slide in the tikkis and deep fry till golden brown and crisp. Drain on an absorbent paper. 5. Apply some mango chilli sauce on the base half of the slider buns. Place a tikki on it, drizzle mayo, place a pickled onion slice, a cheese slice, arrange some cucumber slices and cover with the top half of the slider bun. Secure the slider with the help of a toothpick, garnish with cherry tomato. Serve.
