Sweet Potato & Pesto Stir Fry | Walnut Surprise by Chef Anupa | Sanjeev Kapoor Khazana

An easy pesto made with sweet potato. Can easily be frozen for quick and easy weeknight meals.

SWEET POTATO AND PESTO STIR FRY

Ingredients

2 medium sweet potatoes, cut into 2 inch thin strips with skin
1 cup fresh basil leaves
1 tbsp oil
6-7 California Walnuts, halved
4-5 garlic cloves
1 tbsp parmesan cheese powder
3 tbsps olive oil
1 cup mixed capsicum strips
1 medium onion, sliced
8-10 sundried tomatoes, soaked
Crushed black peppercorns to taste
Mustard micro greens for garnishing

Method

1. Heat oil in a non-stick wok. Add sweet potatoes, toss and cook till golden brown from all sides.
2. To prepare pesto, blend together half the California Walnuts, garlic, parmesan cheese powder and 1 tbsp olive oil into a coarse paste.
3. Add basil leaves and blend again. Add remaining olive oil and blend to a smooth paste. Transfer in a bowl.
4. Crush remaining California Walnuts, add to sweet potatoes, mix and cook for 2-3 minutes or till the sweet potatoes and walnuts turn crisp.
5. Add mixed capsicum strips, onion, sundried tomatoes, salt and crushed peppercorns and toss. Add pesto, switch off heat and toss well.
6. Serve hot garnished with micro greens.
