Kachoris are prepared with potatoes and stuffed with a delicious coconut and jaggery mixture, then fried till crispy.SWEET KACHORIIngredients1½ cups scraped fresh coconut¾ cup chopped jaggery1 tsp poppy seeds (khas khas)A pinch of salt¼ tsp green cardamom powderA pinch of nutmeg powder Ghee for greasing Oil for deep fryingCovering3 medium potatoes, boiled, peeled and mashedA pinch of salt2 tbsps corn flour + for coatingMethod1. Dry roast coconut for 2-3 minutes. Add jaggery and cook till it melts.2. Add salt, green cardamom powder, and nutmeg powder and mix well. Set aside to cool completely. 3. To make the covering, take potatoes in a bowl. Add salt, and corn flour and mix till well combined. Shape it into a ball and cover with a damp muslin cloth. 4. To make a kachori, grease your palms with some ghee. Take a medium sized portion of the potato mixture and shape it into a ball, make a cavity in the centre and stuff with a portion of the jaggery-coconut mixture. Bring the edges to the centre and seal it properly.5. Spread some corn flour on a plate, roll each kachori on it and dust off the excess. 6. Heat sufficient oil in a kadai. Gently slide in one kachori at a time and deep fry till golden brown and crisp. Drain on absorbent paper.7.
