Sweet Bun Maska | Sanjeev Kapoor Khazana

Freshly baked buns with the sweetness of tutti fruiti, with butter spread on it.

SWEET BUN MASKA

Ingredients

2 cups refined flour (maida) + for dusting
1 tablespoon fresh yeast
A pinch + 3 tablespoons castor sugar
½ teaspoon salt
2 teaspoons milk powder
2 tablespoons tutti frutti
2 teaspoons butter +as required
Milk for brushing

Method

1. Preheat oven to 180̊ C.
2. Mix together yeast, a teaspoon of castor sugar and 1-2 tablespoons warm water in a bowl and set aside for 5-10 minutes to activate.
3. Sift together 2 cups flour in another bowl. Add salt, milk powder and remaining castor sugar and mix well.
4. Make a cavity in the center, add activated yeast and mix. Add some water and knead into a soft dough.
5. Add tutti frutti and2 teaspoons butter and knead again. Cover with damp muslin cloth and set aside to prove for 10-15 minutes.
6. Dust the worktop with some flour, place the proven dough and knock back to release excess air.
7. Divide the dough into equal portions and shape into balls.
8. Grease a baking tray with some butter, place the balls, cover with damp muslin cloth and set aside to prove for 10-15 minutes.
9. Brush some milk on top, put the tray into the preheated oven and bake for 12-15 minutes, basting with some butter. Remove from oven, brush some butter and cool.
10. Halve the buns horizontally and apply some butter on the cut side of bun halves.
11. Place the top bun halves on base bun halves, apply some butter on top and serve.
