Sweet And Sour Chicken | Sanjeev Kapoor Khazana

A delicate, smooth and succulent chicken dish, this Sweet and Sour chicken is a medley of taste.

SWEET AND SOUR CHICKEN

Ingredients

450 grams boneless chicken, cut into 1 inch pieces
1 tablespoon oil + for deep-frying
1 egg
1 tablespoon cornstarch
1 tablespoon refined flour (maida)
Salt to taste
Crushed black peppercorns to taste
1 tablespoon chopped garlic
1 inch ginger, finely chopped
3-4 spring onion bulbs, chopped
2 tablespoons tomato ketchup
1 teaspoon soy sauce
1 cup chicken stock
1 teaspoon sugar
1 tablespoon cornstarch slurry
2 tablespoons vinegar
1 tablespoon chopped spring onion greens + for garnishing

Method

1. Heat sufficient oil in a kadai.
2. Put chicken pieces in a bowl. Add egg and mix. Add cornstarch, refined flour, salt and crushed peppercorns and mix well.
3. Put the prepared chicken pieces in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
4. Heat 1 tablespoon oil in a non-stick pan. Add garlic and ginger and sauté for 30 seconds.
5. Add spring onion bulbs and sauté for 1 minute. Add tomato ketchup and mix. Add soy sauce and chicken stock, mix and cook for 1 minute.
6. Add sugar, salt and crushed peppercorns and mix. Add cornstarch slurry, mix and cook till the mixture thickens.
7. Add vinegar and mix. Add fried chicken pieces, mix and cook for 1-2 minutes. Add 1 tablespoon spring onion greens and mix well.
8. Serve hot garnished with spring onion greens.
