A delicate, smooth and succulent chicken dish, this Sweet and Sour chicken is a medley of taste.SWEET AND SOUR CHICKENIngredients 450 grams boneless chicken, cut into 1 inch pieces1 tablespoon oil + for deep-frying1 egg 1 tablespoon cornstarch1 tablespoon refined flour (maida)Salt to taste Crushed black peppercorns to taste1 tablespoon chopped garlic1 inch ginger, finely chopped3-4 spring onion bulbs, chopped2 tablespoons tomato ketchup 1 teaspoon soy sauce1 cup chicken stock1 teaspoon sugar1 tablespoon cornstarch slurry2 tablespoons vinegar1 tablespoon chopped spring onion greens + for garnishingMethod1. Heat sufficient oil in a kadai. 2. Put chicken pieces in a bowl. Add egg and mix. Add cornstarch, refined flour, salt and crushed peppercorns and mix well. 3. Put the prepared chicken pieces in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.4. Heat 1 tablespoon oil in a non-stick pan. Add garlic and ginger and sauté for 30 seconds. 5. Add spring onion bulbs and sauté for 1 minute. Add tomato ketchup and mix. Add soy sauce and chicken stock, mix and cook for 1 minute. 6. Add sugar, salt and crushed peppercorns and mix. Add cornstarch slurry, mix and cook till the mixture thickens. 7. Add vinegar and mix. Add fried chicken pieces, mix and cook for 1-2 minutes. Add 1 tablespoon spring onion greens and mix well. 8. Serve hot garnished with spring onion greens.
