Sushi Lunch How-To With Purple Rice (Kosher Lox w/Veggies and Vegan Avocado roll)

Today I packed a double sushi lunch (on a day when I was running low and really needed to get to the store). Even though I felt pressed and a bit limited, lunch turned out beautifully!

I used Nori and rice from the pantry (cooked the night before) and chopped up the few veggies and fruits I had left in the house (cucumber, carrot, an avocado, and two kiwi). I thawed a cheese danish out of the freezer the night before.

P.s. I'm a mom of 2 and don't keep a kosher home, but must pack kosher-style lunches for my daughter's Jewish preschool. The beauty of sushi lunches is that 1) she loves them 2) they are very economical (rice and seaweed paper are inexpensive to keep on hand) and 3) the rolls pack up about as quickly as a typical sandwich.
