A deliciously crispy and quick snack that is full of flavours and the goodness of yam that provide you with the necessary nutrients.SURANACHE KAAPIngredients500 grams yam (suran)Marination3-4 green chillies4-5 garlic cloves1 inch ginger, roughly chopped1 tsp tamarind pasteSalt to taste1 tsp red chilli powder¼ tsp turmeric powder2 tbsps chopped fresh coriander leavesChutney2-3 green chillies15-20 fresh mint leaves½ cup fresh coriander leaves2 tsps lemon juiceSalt to taste1 tbsp roasted peanutsMethod1. Peel yam and thoroughly wash, cut into medium thick slices.2. To make the marination, put 3-4 green chillies in a blender jar, add 4-5 garlic cloves, 1 inch roughly chopped ginger, ¼ cup water and blend to a fine paste. Transfer this into a large bowl.3. Add tamarind paste, salt, red chilli powder, turmeric powder, and coriander leaves and mix well. Add yam slices and coat with the marination from all sides. Set aside for 5-10 minutes.4. Meanwhile, to make the chutney, put 2-3 green chillies in ablender jar, add 15-20 mint leaves, ½ cup coriander leaves, 2 tsps lemon juice, salt, 1 tbsp roasted peanuts and ¼ cup water and blend to a fine paste. Set aside until use.5. Spread ½ cup semolina, 2tbsps rice flour, salt, ½ tsp red chilli powder, and mix well. Coat each yam slice with this mixture.6. Heat sufficient oil in a non-stick tawa, place the coated yam slices, shallow fry on medium heat till golden brown and crisp on both sides. Drain on absorbent paper.7.
