A deliciously crispy and quick snack that is full of flavours and the goodness of yam that provide you with the necessary nutrients.

SURANACHE KAAP

Ingredients

500 grams yam (suran)
Marination
3-4 green chillies
4-5 garlic cloves
1 inch ginger, roughly chopped
1 tsp tamarind paste
Salt to taste
1 tsp red chilli powder
¼ tsp turmeric powder
2 tbsps chopped fresh coriander leaves
Chutney
2-3 green chillies
15-20 fresh mint leaves
½ cup fresh coriander leaves
2 tsps lemon juice
Salt to taste
1 tbsp roasted peanuts

Method

1. Peel yam and thoroughly wash, cut into medium thick slices.
2. To make the marination, put 3-4 green chillies in a blender jar, add 4-5 garlic cloves, 1 inch roughly chopped ginger, ¼ cup water and blend to a fine paste. Transfer this into a large bowl.
3. Add tamarind paste, salt, red chilli powder, turmeric powder, and coriander leaves and mix well. Add yam slices and coat with the marination from all sides. Set aside for 5-10 minutes.
4. Meanwhile, to make the chutney, put 2-3 green chillies in ablender jar, add 15-20 mint leaves, ½ cup coriander leaves, 2 tsps lemon juice, salt, 1 tbsp roasted peanuts and ¼ cup water and blend to a fine paste. Set aside until use.
5. Spread ½ cup semolina, 2tbsps rice flour, salt, ½ tsp red chilli powder, and mix well. Coat each yam slice with this mixture.
6. Heat sufficient oil in a non-stick tawa, place the coated yam slices, shallow fry on medium heat till golden brown and crisp on both sides. Drain on absorbent paper.
7. Arrange the fried yam slices on a serving plate and serve hot with the green chutney
