HOME STYLE DAL CHAWAL
Preparation time 5-10 minutes
Cooking time 20-25 minutes
Serve 2-4

Ingredients
For Pudina Chai
2 cups Water,
1 tsp Fennel seeds,
1 tbsp Jaggery,
2 tsp Tea leaves,
4-5 Mint leaves,
1 lemon wedge,

For Ginger Green Chilli Paste
1 inch Ginger (peeled & roughly chopped)
3 no. Green chillies (less spicy & roughly chopped)
Salt to taste,

For Cooking Dal
2 tbsp Ghee,
2 tbsp Oil,
1 tsp Onion seeds,
1 tsp Fennel seeds,
tsp Fenugreek seeds,
2 tsp Cumin seeds,
tsp small Mustard seeds,
Prepared Ginger green chili paste,
cup Toor dal, washed,
cup Moong dal, washed,
tsp Asafoetida,
2 tsp Degi red chili powder,
1 tsp Turmeric powder,
Salt to taste,
2 cups Water,
Raw Mango (peeled & roughly chopped)
1 tbsp Jaggery,

For Cooking Rice
3 cups Water,
Salt to taste,
3 no. Green cardamom,
2 cups Short grain rice (Ambemohar), washed,

For Frying Chillies
cup Oil,
2 tbsp Ghee,
5-6 no. Dry red chillies,

For Garnish
Fried chillies,
Lemon wedge,
Coriander sprig,

Process
For Pudina Chai
In a kettle, add water, fennel seeds, jaggery, tea leaves and let it boil for 5-6 minutes.
In a cup, add mint leaves, lemon wedge and prepared chai and mix well.
Serve hot.

For Ginger Green Chilli Paste
In a mortar pestle, add ginger, green chillies, salt to taste and grind it into coarsely paste.
Keep it aside for further use.

For Cooking Dal
In a handi, heat ghee & oil, add onions seeds, fennel seeds, fenugreek seeds, cumin seeds, small mustard seeds, prepared ginger green chili paste and let it saute for a minute.
Add toor dal, moong dal and saute it very well.
Add asafoetida, degi red chili powder, turmeric powder, salt to taste, water and mix it well.
Cover it with the lid and cook it for 20-25 minutes on medium flame.
Add raw mango, jaggery and cook it for 2-3 minutes.
Transfer it on a serving dish along with prepared rice and garnish it with fried red chillies, lemon wedge and coriander sprig.
Serve hot.

For Cooking Rice
In a handi, add water, salt to taste, green cardamom, short grain rice and mix it well.
Cover it with the lid and cook it for 10-15 minutes on low to medium flame.
Open the lid and transfer it to the serving dish or bowl along with prepared cooked dal.
Serve hot.

For Frying Chillies
In a pan, heat oil & ghee, add dry red chillies and fry them for 2-3 minutes or until it's crispy.
Remove it on a plate or tray and keep it aside for further use.
