There will be absolutely no sufferin' with this Summery Succotash Strangewich.http://hellmanns.com/strangewich RECIPE BELOW: Summery Succotash StrangewichServes 4 Ingredients8 crispy slices thick cut bacon, bacon grease reserved2 Tbsp thyme, pickedOlive oil as neededSalt and pepper, to taste8 ounces fresh burrata, divided2 cups arugulaCiabatta rolls, buttered and broiled/toasted Succotash4 poblano peppers, roasted and sliced into ¼ inch strips1 cup corn kernels, sautéed until caramelized1 pint cherry tomatoes, sliced in half and sautéed until tender1/2 cup red onion, diced and sautéed1 cup frozen fava beans or lima beans, thawed Spiced Basil Mayo1 1/2 cups Hellmann’s Mayonnaise2 garlic clove, minced2 Tbsp lemon juice1/2 Tbsp cayenne1/2 Tbsp cumin, toasted and ground1 cup basil leaves, picked and choppedSalt and pepper, to taste In a bowl, combine all Spiced Basil Mayonnaise ingredients until smooth.
