Summery Succotash Strangewich | Tastemade

There will be absolutely no sufferin' with this Summery Succotash Strangewich.

Summery Succotash Strangewich
Serves 4

Ingredients
8 crispy slices thick cut bacon, bacon grease reserved
2 Tbsp thyme, picked
Olive oil as needed
Salt and pepper, to taste
8 ounces fresh burrata, divided
2 cups arugula
Ciabatta rolls, buttered and broiled/toasted

Succotash
4 poblano peppers, roasted and sliced into ¼ inch strips
1 cup corn kernels, sautéed until caramelized
1 pint cherry tomatoes, sliced in half and sautéed until tender
1/2 cup red onion, diced and sautéed
1 cup frozen fava beans or lima beans, thawed

Spiced Basil Mayo
1 1/2 cups Hellmann’s Mayonnaise
2 garlic clove, minced
2 Tbsp lemon juice
1/2 Tbsp cayenne
1/2 Tbsp cumin, toasted and ground
1 cup basil leaves, picked and chopped
Salt and pepper, to taste

In a bowl, combine all Spiced Basil Mayonnaise ingredients until smooth. Season with salt and pepper as needed.
In another bowl, mix together succotash ingredients until incorporated. Season with salt, pepper, and thyme.
Slather remaining mayo on toasted ciabatta, a few arugula leaves, one hefty scoop of succotash, one portion of the burrata, and 2 slices of bacon.
Top with bun top, enjoy.
