Summer Vegetable Mix | Sanjeev Kapoor Khazana

Fresh cut vegetables tossed in spicy chipotle in adobo sauce.

SUMMER VEGETABLE MIX

Ingredients

½ cup sliced zucchini
½ cup sliced yellow squash
½ cup blanched broccoli florets
2 tablespoons sliced fresh jalapeno
1 medium red pepper, juliennes
1 medium yellow pepper, juliennes
1 medium green capsicum, juliennes
2 tablespoons oil
1 tablespoon chopped garlic
¼ cup sliced onion
2 tablespoons chipotle in adobo sauce
Salt to taste
Black pepper powder to taste
2 tablespoons chopped coriander


Method

1. Heat the oil in a non-stick pan, add garlic, chipotle in adobo sauce, salt and pepper powder and sauté for a minute.
2. Add jalapenos onion, peppers, zucchini and yellow squash and sauté lightly.
3. Add broccoli and coriander and toss to mix.
4. Serve hot.
