Sugarcane Granita | Cooking Classy with Afraz | Sanjeev Kapoor Khazana

Once you have tried this fancy, super refreshing sugarcane granita - plain old sugarcane juice will never be good enough.

SUGARCANE GRANITA

Ingredients

3 cups sugarcane juice
Salt to taste
2 teaspoons sugar
Ice cubes as required
Zest of 1 kaffir lime
Juice of ½ lemon
Lemon slice for garnishing
Fresh mint sprig for garnishing
Lemongrass stick for garnishing

Method

1. Blend together sugarcane juice, salt, sugar, lots of ice cubes, kaffir lime zest and lemon juice into a smooth mixture.
2. Pour the mixture in a shallow square glass dish and freeze for 2-3 hours. Scrape the mixture using a fork and freeze again for 1-2 hours, scraping occasionally.
3. Serve chilled garnished with a lemon slice, a mint sprig and lemon grass stick.
