Once you have tried this fancy, super refreshing sugarcane granita - plain old sugarcane juice will never be good enough.SUGARCANE GRANITAIngredients3 cups sugarcane juiceSalt to taste2 teaspoons sugarIce cubes as required Zest of 1 kaffir lime Juice of ½ lemonLemon slice for garnishingFresh mint sprig for garnishingLemongrass stick for garnishingMethod1. Blend together sugarcane juice, salt, sugar, lots of ice cubes, kaffir lime zest and lemon juice into a smooth mixture. 2. Pour the mixture in a shallow square glass dish and freeze for 2-3 hours. Scrape the mixture using a fork and freeze again for 1-2 hours, scraping occasionally. 3.
