Stuffed Paneer Fingers Party Snacks Sanjeev Kapoor Khazana

This is a perfect dish for those who love paneer thats prepared Western-style and filled with a desi stuffing that can work as an interesting appetiser or as a wrap/roll stuffing

STUFFED PANEER FINGERS

Ingredients

300 grams cottage cheese (paneer), grated
1 tbsp oil
1 small onion, chopped
2 green chillies, chopped
4-5 French beans, chopped
Salt to taste
1 small carrot, peeled and finely chopped
tsp turmeric powder
tsp red chilli powder
tsp cumin powder
tsp garam masala powder
1 medium potato, boiled, peeled and mashed
3 tbsps chopped fresh coriander
1 tsp lemon juice
A pinch of sugar
1 tsps onion powder
1 tsp garlic powder
Black pepper powder to taste
cup grated processed cheese
cup crushed cornflakes
cup dried breadcrumbs
Refined flour slurry as required
Oil for deep frying
Tomato ketchup for serving
Salad for serving

Method

1. Heat oil in a nonstick pan. Add onion, green chillies, French beans, salt and saut for 2-3 minutes.
2. Add carrot and cook for 2-3 minutes.
3. Add turmeric powder, red chilli powder, cumin powder, garam masala powder and saut for a minute.
4. Add potatoes and mix well. Add 2 tbsps coriander, lemon juice, sugar and mix well. Take the pan off the heat and allow to cool.
5. Take cottage cheese in a bowl. Add salt, onion powder, garlic powder, black pepper powder and mash well.
6. Add processed cheese to the vegetable mixture and mix well.
7. Take a portion of the cottage cheese mixture, flatten it slightly, stuff with the portion of the vegetable mixture and seal the edges. Shape into cylinders.
8. Heat sufficient oil in a kadai.
9. Spread cornflakes on a plate, add dried breadcrumbs, remaining coriander and mix well.
10. Dip the prepared cylinders in refined flour slurry and roll in the cornflakes mixture. Deep fry in oil till golden brown and crisp.
11. Drain on absorbent paper and serve hot with tomato ketchup and salad.
