Mushrooms stuffed with a mixture of jalapenos, parsley, breadcrumbs and cheeseIngredients12 large button mushrooms, stems removed2 medium onions8-10 garlic cloves7-8 pickled jalapenos3-4 sprigs fresh parsley + to garnish100 gms processed cheeseSalt to tasteDried breadcrumbs, as requiredOlive oil as requiredMethod1. Preheat oven to 200° C. 2. Chop onions, garlic, jalapenos and parsley in a chopper and transfer into a bowl.3. Grate cheese into the bowl. Add salt and mix well. Stuff this mixture generously into the mushroom hollows.4. Arrange the mushrooms on a non-stick baking tray. Sprinkle a little dried breadcrumbs on each mushroom, drizzle a little olive oil and cook in the preheated oven for 15-20 minutes.5.
