Mix together all the stuffing ingredients. Wash, de-seed and slice the capsicum into two halves. Brush with olive oil and set aside. Stuff the capsicum with the tofu mixture. Grill it in a preheated oven at 180°C for 15 minutes.Pack it in the tiffin box.
