Strip Samosa Recipe
Ingredients for Dough:
All-purpose flour 3 cups
Salt 1 tsp
Carom seeds 1 tsp
Ghee 3-4 tbsp
Water as required

Ingredients for Potato Mixture:
Oil 2 tbsp
Roasted cumin seeds 1 tsp
Onion (chopped) 1/4 cup
Ginger Garlic paste 1/2 tbsp
Salt to taste
Red Chili powder 1 tsp
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Boiled and Mashed potatoes 500 g
Green Chilies (chopped) 1 tbsp
Fresh Coriander (chopped) 2 tbsp
Nigella seeds 1 tsp

Directions for Assembling:
Dough
Potato mixture
Water (for brushing) as required
Oil (for deep frying) as required

Directions for Dough Preparation:
In a bowl add flour, salt, carom seeds, ghee and mix well.
Rub the flour with the ghee until the ghee is well incorporated in all of the flour. Do this for 3 to 4 minutes, you don’t want to rush this step. Once incorporated, the mixture resembles crumbs.
To check the consistency, take some flour between your palm and press it, it should form a shape (& not crumble), this shows ghee is enough and well incorporated.
Now, start adding water, little by little and mix to form a stiff dough. Don’t overwork the dough and don’t knead a soft dough. It should just come together and form a stiff dough.
Cover the dough with a moist cloth and let it rest for 40 minutes.

Directions for Potato Mixture Preparation:
Heat oil in a preheated pan and add cumin seeds and cook for 1 minutes. Add onion and cook until translucent.
Now, add ginger garlic paste and cook for another 2 minutes. Add salt, red chili powder, turmeric powder, nigella seeds and coriander powder, cook for a minute.
Add boiled & mashed potatoes and mix well.
Lastly add green chilies, coriander, and nigella seeds, give it a good mix and take off the flame and let it cool down.
Directions for Assembling:
Now, cut the dough in 4 parts and make balls. Roll one ball into thin sheet with rolling pin, cut the edges and cut into the size of 10’6. Now cut the thin dough sheet into 2 halves making each of size 5*6.
Cut the shapes as shown. Makes 3 different shapes. Place the potato filling and use water for brushing and keeping the shape intact.
In a large frying pan, deep fry on low medium flame until crispy and lightly golden brown. Serve hot with your favorite dips.
