Street Style Dahi Phulki

Ingredients for Phulki:
Gram flour 1 cup
Salt 1 tsp
Carom seeds 1/2 tsp
Baking powder 1 tsp
Turmeric powder 1/2 tsp
Water 1/2 cup
Oil (for frying) as required
Water (for soaking) as required

Ingredients for Mint Yogurt:
Green coriander (chopped) 1 cup
Mint leaves 1/2 cup
Green chilies 2
Garlic cloves 3-4
Salt 1/2 tsp
NESTL MILKPAK yogurt 1 cup

Ingredients for Imli Chutney:
Tamarind pulp 1 cup
Sugar 1/2 cup
Salt 1/2 tsp
Red chili powder 1 tsp
Red chili flakes 1 tsp
Black salt 1 tsp
Water 1/2 cup

Ingredients for Sweet Yogurt:
NESTL MILKPAK yogurt 1 cup
Sugar 1 tbsp
NESTL MILKPAK Full Cream Milk 1/2 cup

Ingredients for Assembling:
Prepared phulki as required
Ballay as required
Boiled potatoes (cubes) 2 cups
Onion (sliced) 1 cup
Cabbage (shredded) 1 cup
White chickpeas (boiled) 1/2 cup
Tomatoes (chopped) 1 cup
Sweet yogurt as required
Mint yogurt as required
Imli chutney as required
Papri as required
Chaat masala as required

Directions for Phulki Preparation:
1. In a bowl add gram flour, salt, carom seeds, turmeric powder, baking powder, water and mix it well. Keep the consistency thick.
2. Transfer the mixture to a piping bag and pipe out small portions of the batter into preheated oil in a pot. Deep fry until golden brown in color.
3. Transfer the prepared phulki to water and soak them for 30 mins. Now squeeze out the water and set them aside for later use.
Directions for Mint Yogurt Preparation:
4. In a jar add green coriander, mint leaves, green chilies, garlic, and salt and blend it well into a smooth paste. Your green chutney is ready. Set aside.
5. In a bowl add NESTL MILKPAK yogurt and 1 tbsp of green chutney. Mix it well. Your Mint Yogurt is ready.
Directions for Imli Chutney Preparation:
6. In a preheated pan add tamarind pulp, sugar, salt, red chili powder, red chili flakes, black salt, salt and mix and cook for 2-3 mins.
7. Now add water and cook until thick in consistency. Set aside and let it cool at room temperature. Your Imli Chutney is ready.
Directions for Sweet Yogurt Preparation:
8. In a bowl add NESTL MILKPAK yogurt, sugar, NESTL MILKPAK Full Cream Milk and mix it well. Your sweet yogurt is ready.
Directions for Assembling:
9. In a large dish add a layer of prepared phulki. Set bhallay on the sides. Add a layer of tomatoes, boiled potatoes, onion, cabbage, boiled white chickpeas and mint add some mint leaves.
10. Add this mixture in a plate, top it with sweet yogurt, mint yogurt, imli chutney, papri, chaat masala and serve.
11. Your Steet Style Dahi Phulki is ready.
