Strawberry Mille-Feuille Cheesecake

INGREDIENTS
2 Frozen pie sheets 18 x 10cm, thawned
6 teaspoons Sugar

Strawberry cheese cream
200 milliliters Heavy cream
150 grams Cream cheese, at room temperature
40 grams Sugar
15 grams Strawberry powder
1 teaspoon Lemon juice

8 Strawberry slices for filling
2 Strawberries to top

Powdered sugar to top

PREPARATION
1. Add heavy cream and 20 grams of sugar to a bowl and whisk until horns form.

2. In a separate bowl, add the cream cheese and the remaining sugar and mix until smooth.

3. Incorporate the whipped cream to the cream cheese mix , add lemon juice and mix well. Add strawberry powder, and mix until the color is uniform, pour into a piping bag and cool in the refrigerator for 30 min.

4. Cut the pie sheet into three equal rectangles and make several holes with a fork.

5. Set a frying pan over low heat, place the pie sheet rectangles and cook for 10 minutes. Turn it over when they begin to brown, cover and cook for another 10 minutes.

6. Sprinkle 1 teaspoon of sugar on the surface of the pie sheet rectangles and turn it over so that the sugar is at the bottom. Cover with parchment paper, weight it down with a small frying pan, and cook on high heat for about 1 minute.

7. Squeeze the strawberry cheese cream on the surface of the pie sheet, top with 2 strawberry slices, and place another pie on top. Repeat one more time..

8. Squeeze more cheese cream on the top and decorate with a full strawberry. Finish with a sprinkle of powdered sugar.
