: Strawberry Cream Buns Honeykki

Ive been craving cream buns so much, so I made some, with some strawberries on top, even.
The shape of the buns is inspired by this Italian bread called Maritozzi.
Wow, they really load it with the cream in that sandwich.
I cant go anywhere overseas these days,
so Ill have to recreate it here, and while Im at it, I added a hint of Koreanness to the recipe.
I love the fruity version so much more!

I recommend whipping the cream well ahead and chill in the fridge. This makes it easier to fill and to eat.

* ( 8 ) Ingredients (8 buns)
300g, 30g, 5g, 5g( )
30g, 15g (*), 1, 130ml
500g, 50g(* ), 50g

300g bread flour, 30g sugar, 5g salt, 5g instant dry yeast
30g unsalted butter, 15g skim milk powder (*optional), 1 egg, 130ml milk
500g double cream, 50g Mascarpone, 50g sugar
Strawberries for decor, powdered sugar

* Recipe

1. Mix every ingredient except for butter and mix until it forms one ball of dough.

2. When a ball of dough has formed, mix in butter, softened at room temperature.

3. Once you get a glossy dough, take it out of the stand mixer and roll into a ball.

4. Place in a large mixing bowl and proof for 70~90 minutes until doubled in size.

Proofing time varies depending on the temperature of the room and the dough.

5. Once proofed, knead to take the air out.

6. Portion the dough into eighths (69~70g), roll into balls and proof for 15 minutes.

7. Roll out with a rolling pin, fold the top and bottom, and mold into a cylinder again.

Make sure to pinch the seams whole, or the dough will tear at the side.

8. Cover with cloth or a lid and second-proof for about 1 hour.

9. Once the proofing is done, apply egg wash.

10. Bake in an oven preheated at 170 for 8~10 minutes.

Baking temperature and time may vary depending on the oven.

11. Let the baked bread cool.

12. Soften the Mascarpone and sugar in a mixing bowl with a whisk.

13. Add heavy cream and whip until hard peaks form.

14. Keep the cream chilled in the fridge.

15. Score the middle of the cooled bun, line with strawberries and fill with cream.

16. Lastly, top with strawberries and finish off with powdered sugar.
