Sago cake is a dish that is so delicious yet so difficult to make! There are many different variations of it, but we made ours in single portions where the sago holds together better and easier to handle.

We decided to make it 3 layers, with a layer of gula melaka in the center. The flavour of pandan and sweetness from the gula melaka mixed with the texture of sago is just a match made in heaven. Best served with a cup of tea at midday.

Ingredients here
Pandan layer:
200g small sago pearl
120g shredded coconuts
tsp salt
60g coconut milk
200ml pandan juice (20 pieces of pandan leaves + 200ml of water)
tsp green colouring
70g caster sugar

Gula melaka layer:
100g small sago pearl
50g shredded coconuts
250g gula Melaka block
tsp salt
30g coconut milk
80ml water
