Steamed fish served with roasted capsicums and orange sauce

STEAMED FISH WITH ORANGE SAUCE

Ingredients

2 basa fish fillets
A little orange rind
2 cups orange juice
1 large green capsicum
½ large red capsicum
1 tbsp oil
Salt to taste
Juice of ½ lemon
1 fresh red chilli
5-6 green garlic stalks

Method

1. Heat sufficient water in a deep non-stick pan. Cut ½ green capsicum and red capsicum into bite sized pieces. Cut the remaining ½ green capsicum into 2 vertical pieces.
2. Heat oil in another non-stick pan, add bite sized pieces of green and red capsicum and salt.
3. Grate a little orange rind.
4. Keep a bamboo steamer over the hot water.
5. Sprinkle salt, lemon juice and orange rind over the fish pieces. Keep 2 vertical pieces of green capsicum at the base of the steamer, keep the fish fillets over them. Cover the steamer and steam.
6. When the capsicums in the other pan are lightly roasted, add orange juice. Slit fresh red chilli and add and cook till the juice reduces slightly.
7. Finely chop green garlic stalks.
8. Drain the capsicums from the juice and place on a serving plate. Pour a little juice over them. Remove the fish from the steamer and place over the capsicums. Garnish with green garlic stalks and serve immediately.
