Make use of the fresh strawberries this season to make this delicious granita.STAWBERRY GRANITAIngredients12-15 strawberries, hulled¼ cup castor sugarSalt to tasteJuice of ½ lemon Fresh mint sprigs for garnishing Method1. Roughly chop strawberries. 2. Heat chopped strawberries a non-stick pan. Add castor sugar, salt and lemon juice, mix and cook till soft and pulpy. Remove from heat and cool.3. Grind the strawberry mixture alongwith 2-3 cups chilled water to make a smooth mixture. 4. Strain the mixture into a glass baking dish and freeze for 1-2 hours. 5. Remove from freezer and scrape the mixture using a fork. Put it back in the freezer for 1 hour.6.
