Stawberry Granita | Sanjeev Kapoor Khazana

Make use of the fresh strawberries this season to make this delicious granita.

STAWBERRY GRANITA

Ingredients

12-15 strawberries, hulled
¼ cup castor sugar
Salt to taste
Juice of ½ lemon
Fresh mint sprigs for garnishing

Method

1. Roughly chop strawberries.
2. Heat chopped strawberries a non-stick pan. Add castor sugar, salt and lemon juice, mix and cook till soft and pulpy. Remove from heat and cool.
3. Grind the strawberry mixture alongwith 2-3 cups chilled water to make a smooth mixture.
4. Strain the mixture into a glass baking dish and freeze for 1-2 hours.
5. Remove from freezer and scrape the mixture using a fork. Put it back in the freezer for 1 hour.
6. Scrape out the mixture and serve chilled garnished with a mint sprig.
