Dr. Manisha Dhinge - Squids Stuffed with Prawns

SQUIDS STUFFED WITH PRAWNS

Ingredients

400 grams squids, cleaned and cut into squares
150 grams small prawns, cleaned
1 tablespoon lemon juice
Salt to taste
2 teaspoons turmeric powder
2 teaspoons black pepper powder
1 tablespoon oil + for shallow-frying
A pinch of asafoetida
1 green chilli, chopped
1 tablespoon ginger-garlic paste
1 teaspoon red chilli powder
1 teaspoon garam masala powder

Method

1. Take squids in a bowl. Add lemon juice, salt, 1 teaspoon turmeric powder and 1 teaspoon pepper powder and mix well. Set aside to marinate for ½ hour.
2. Heat oil in a non-stick pan. Add asafoetida, green chilli and ginger-garlic paste, mix well and sauté for a minute.
3. Add prawns and mix well. Add chilli powder, garam masala powder, remaining turmeric powder, remaining pepper powder and salt, mix well and cook till prawns are fully done.
4. Place a squid on the worktop and place a spoonful of the cooked prawn mixture at one end. Roll tightly and tie with a string.
5. Heat some oil in a non-stick pan. Place stuffed squids on it and shallow-fry till evenly done from all sides. Drain on absorbent paper.
6. Discard the string and serve hot.
