Spring onions and corn come together to make these awesome fritters. SPRING ONION AND CORN FRITTERSIngredients 2 stalks spring onion greens, finely chopped1 cup cream style cornOil for deep-frying and greasing ¼ cup fresh white breadcrumbsSalt to taste1 tbsp cornstarch½ tsp red chilli flakesCrushed black peppercorns to taste½ cup mayonnaise2-3 tbsps green chutneyMethod1. Heat sufficient oil in a pan.2. Take corn in a bowl. Add breadcrumbs, spring onion greens and salt and mix. Add cornstarch, chilli flakes and crushed peppercorns and mix well.3. Grease your palms with some oil, divide the mixture into equal portions and shape into balls.4. Deep-fry the balls in hot oil till golden and crisp. Drain on absorbent paper. 5. To prepare dip, take mayonnaise in another bowl. Add green chutney and mix well. Refrigerate.6.
