SPLIT PEA SOUP: CREAMY, GREENER, AND TASTIER PEA SOUP

Full recipe for the SPLIT PEA SOUP
Ingredients
1 cup dry split peas
3 squashes (skin only) *
1 onion
cup olive oil
5 cups chicken broth
tbsp salt
tsp ground black pepper

For serving:
cup heavy cream
3-4 spring onions

(*) You can use the skin of 3 squashes or 1 whole squash by grating it

Directions:

PREPARATION
Thoroughly wash the squashes
! You can either use 1 whole squash OR the skins of 3-4 squashes to enhance the taste and the green colour of the Split Pea Soup.
Wash the spring onions, cut the green parts into small pieces,
set aside to use for serving
Peel, wash, and dice the onion
set aside

COOKING
Saut the diced onion in 1/2 cup of olive oil for 2-3 minutes on the medium-high setting
When the onion becomes translucent, add the squash skins (or the grated squash)
Stir for 1 minute, then add the 5 cups of chicken broth
Cover the pot with a lid and let the mixture come to a boil

Meanwhile, wash 1 cup of dry Split Peas
Once the onion-squash-chicken broth mixture boils, add the washed split peas
Cook on medium heat for 20-25 minutes, by stirring from time to time, until the peas soften
Add 1/4 tsp ground black pepper and 1/2 tsp salt
Set the stove to the medium-low setting, and puree the ingredients using a hand blender
Cover the pot and let the soup simmer for 8-10 minutes before turning off the stove

SERVING
Serve the Split Pea Soup hot!
