Full recipe for the SPLIT PEA SOUPIngredients1 cup dry split peas3 squashes (skin only) *1 onion cup olive oil5 cups chicken broth tbsp salt tsp ground black pepperFor serving: cup heavy cream3-4 spring onions(*) You can use the skin of 3 squashes or 1 whole squash by grating itDirections: PREPARATIONThoroughly wash the squashes! You can either use 1 whole squash OR the skins of 3-4 squashes to enhance the taste and the green colour of the Split Pea Soup. Wash the spring onions, cut the green parts into small pieces, set aside to use for servingPeel, wash, and dice the onionset asideCOOKINGSaut the diced onion in 1/2 cup of olive oil for 2-3 minutes on the medium-high settingWhen the onion becomes translucent, add the squash skins (or the grated squash)Stir for 1 minute, then add the 5 cups of chicken brothCover the pot with a lid and let the mixture come to a boilMeanwhile, wash 1 cup of dry Split PeasOnce the onion-squash-chicken broth mixture boils, add the washed split peasCook on medium heat for 20-25 minutes, by stirring from time to time, until the peas softenAdd 1/4 tsp ground black pepper and 1/2 tsp saltSet the stove to the medium-low setting, and puree the ingredients using a hand blenderCover the pot and let the soup simmer for 8-10 minutes before turning off the stoveSERVINGServe the Split Pea Soup hot!And with a couple of slices of artisan breadThe Split Pea Soup has a creamy texture, bright green colour, and marvellous taste!A spoonful of heavy cream helps to further develop its heavenly flavour and creamy textureAnd a few pieces of spring onion give it a fresh finish that leaves you wanting more!This soup is in a class of its own!
