Tasty Potato spinach rolls are great for snacking as well as sharing with friends and family during get togethers and potlucks. They can be made in advance and serve with Chutney of your choice.

For the recipe, I used: 2 mashed potatoes, 1 cup of chopped spinach,
Oi for frying. Spices used: Salt, Pepper, Paprika, Mango Powder ( Amchur), Garam Masala.
For the batter: Chick pea flour and Oats flour.

first prepare the filling with potatoes and spinach combined with spices. Make logs and roll them in batter made out of chickpea and oats flour then deep fry or bake them at 375 F ( turnover half way and brush with oil)
Cook until golden brown and serve with mint or tamarind chutney.
