Interesting oriental recipe, Noodles tossed with bok choy, tofu, veggies and spicy sauce, super filling and delicious.

SPICY NOODLES WITH TOFU AND VEGETABLES

Ingredients

2 cups boiled noodles
150 grams silken tofu
1 tablespoon sichuan bean paste
1 tablespoon oil
1 tablespoon chopped garlic
½ teaspoon red chilli flakes
3-4 dried shiitaki mushrooms, soaked for 30 minutes in hot water
¼ cup mixed capsicum strips (red, yellow and green)
Salt to taste
Crushed black peppercorns to taste
1 bok choy
Red chilli oil for drizzling
Chopped and fried garlic for garnishing

Method

1. Heat oil in a non-stick pan. Add garlic and sauté for 1 minute. Add chilli flakes and sauté for 1 minute.
2. Drain, discard the stems and cut the shiitaki mushrooms into thin strips. Add to pan and sauté for 1 minute.
3. Add sichuan bean paste and mix. Add 2-3 tablespoons water, mix and cook for 2-3 minutes.
4. Add mixed capsicum strips and mix. Add noodles, salt and crushed peppercorns and toss well.
5. Slice bok choy and add to pan.
6. Slice the tofu, add to pan, mix and cook for 1 minute.
7. Put the noodles on a serving platter. Drizzle some chilli oil and serve hot garnished with fried garlic.
