Ingredients for Green Peas Pickle - मटर का अचार
Peas - मटर - a little more than 2 Cup
Sugar - चीनी - 1 tsp
Coriander Seeds - साबुत धनिया - 1 tbsp
Fennel Seeds - सौंफ - 1 tbsp
Cumin Seeds - जीरा - 1 tsp
Fenugreek Seeds - मेथी दाना - 1 tsp
Carom Seeds - अजवाइन - 1 tsp
Black Pepper - काली मिर्च - 10 - 12
Yellow Mustard - पीली सरसों - 1 tbsp
Mustard Oil - सरसों का तेल - 1/2 Cup
Asafoetida - हींग - 1 pinch
Black Cumin Seeds - कलौंजी - 1/2 tsp
Turmeric Powder - हल्दी पाउडर - 1 tsp
Red Chilli Powder - कश्मीरी लाल मिर्च पाउडर - 2 tsp
Salt - नमक - 2 tsp
Black Salt - काला नमक - 1 tsp
Vinegar - सिरका - 2 tbsp

How to prepare matar pickle?
1. Take 3 cups of water in a vessel and bring it to a boil.
2. Add 1 tsp of sugar to water and boil the water till sugar dissolves. Add 2 cups of green peas to the water and boil them for 1.5 minutes.
3. Turn off the flame and strain the peas. Take a bowl of water with ice cubes and add peas to it.
4. keep them in cold water for 2-3 minutes. Transfer to the strainer and drain the water completely.
5. Spread the peas on a cloth and either pat dry them or leave them under the fan for 15-20 minutes.
6. Dry roast 1 tbsp of dry coriander seeds, 1 tbsp of fennel seeds, 1 tsp of cumin seeds, 1 tsp of fenugreek seeds, 1 tsp of carom seeds, and 10-12 black pepper for 1 or 1.5 minutes.
7. Add 1 tbsp of mustard seeds and roast it together with spices for 15-20 seconds.
8. Once the masala cools down, coarsely grind them in the mixer.
9. Heat 1/2 cup of mustard oil in the pan till it smokes. Turn off the flame and allow it to cool.
10. Add 1 pinch hing and 1/2 tsp of black cumin seeds to the oil.
11. Take peas in a bowl and add coarsely ground spices to the peas.
12. Mix 1 tsp of turmeric powder, 2 tsp of red chili powder, 2 tsp of salt, 1 tsp of black salt, and oil in the peas.
13. Lastly, add 2 tbsp of vinegar and mix well. Leave the pickle for 2 days and stir it once a day.
14. Green peas pickle is ready to be served.
