Spicy Egg Pulao Street style egg Biryani easy recipe Chef Ranveer Brar

EGG PULAO
Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Cooking Rice
Water as required,
Salt to taste,
2 no. Bay leaf,
1 inch Cinnamon stick,
700 gms Sella Basmati rice (soaked for 30 minutes)

For Egg Masala
3-4 tbsp Ghee,
1 tbsp Oil,
1 no. Bay leaf,
1 inch Cinnamon stick,
1 no. Black cardamom,
2 no. Green cardamom,
1 no. Mace,
3 medium Onions, sliced,
1 no. Green chillies, slit into half,
inch Ginger (peeled & chopped)
tsp Turmeric powder,
1 tsp Degi red chili powder,
1 tsp Coriander powder,
cup Curd, beaten,
10 no. Hard boiled Eggs,
Salt to taste,
1 tbsp Tender coriander stems, finely chopped,
1 tsp Dry fenugreek leaves, crushed,
1-2 tbsp Saffron water, (optional)

For Egg Mixture
4-5 no. Hard boiled Eggs, grated,
2 no. Green chillies (less spicy & chopped)
1 tbsp Coriander leaves, roughly chopped
1 tbsp fresh Mint leaves (roughly chopped)
Salt to taste,
tsp Degi red chilli powder,


For Assembling
Cooked Rice,
2 tbsp Ghee,
Grated Egg Mixture,
Cooked Rice,
Remaining Egg Masala,

For Garnish
Green chili (less spicy & slit into half)
Coriander sprig,

For Raita
1 cup Curd, beaten,
1 no. Green chili (less spicy & chopped)
inch Ginger (peeled & chopped)
1 medium Tomato, chopped,
1 tsp Saffron water
Salt to taste,

For Garnish
A pinch of roasted cumin powder,
Degi red chili powder,
Coriander sprig,

Process
For Cooking Rice
In a handi or sauce pot, add water, once its roaring boiled, add salt to taste, bay leaf, cinnamon stick, sella basmati rice and get a quick boil.
Cover it with the lid and cook it for 7-8 minutes on high flame.
Strain out the cooked rice and transfer it to a tray for resting.

For Egg Masala
In a handi, add ghee, oil, once it's hot, add bay leaf, cinnamon stick, black cardamom, green cardamom, mace and let it splutter.
Add onions, green chillies, ginger and saute it for 2-3 minutes until golden in color.
Add turmeric powder, degi red chili powder, coriander powder, curd and cook it for a while.
Add hard boiled eggs, salt to taste, tender coriander stems, saffron water and cook it well until cooked well.
Transfer half of the masala to a bowl and keep it aside for further use.

For Egg Mixture
In a bowl, add grated boiled eggs, green chillies, coriander leaves, fresh mint leaves, salt to taste, degi red chili powder and mix it well.
Keep it aside for further use.

For Assembling
In the same handi, layer cooked rice and spread evenly.
Add ghee, prepared egg mixture, cooked rice, prepared egg masala and spread evenly.
Cover it with the lid and cook it for 10-12 minutes on low flames.
Transfer it to a serving bowl, garnish it with green chili and coriander sprig.
Serve hot with prepared raita.

For Raita
In a bowl, add curd, green chili, ginger, tomato, saffron water, salt to taste and mix it well.
Transfer it to a serving bowl, garnish it with roasted cumin powder, degi red chili powder and coriander sprig.
