Ingredients for Curry Masala:
Cumin seeds 2 tbsp
Coriander seeds 2 tbsp
Turmeric powder 2 tbsp
Red Chilies (dried) 4-5
Fenugreek seeds 1 tbsp
Green Cardamom ½ tbsp

Ingredients for Chicken Thighs:
Yogurt 1 cup
Oil 1½ tbsp
Curry Masala 1 tbsp
Red Chili powder 1 tbsp
Cumin powder ½ tsp
Garlic powder 1 tsp
Onion powder 1 tsp
Salt 1 ½ tsp or to taste
White pepper powder 1 tsp
Lemon Juice 2 tbsp
Chicken Thighs 6-8
Oil (for cooking) 2-3 tbsp
Leftover marinade
Boiled Rice
Green Coriander (for garnishing)

Directions for Curry Masala Preparation:
In a preheated pan add cumin seeds, coriander seeds, cardamom, fenugreek seeds, red chilies and roast until fragrant. Take off the flame and cook down to room temperature.
Now transfer all the roasted ingredients in a pulse machine and add turmeric powder. grind until fine powder has formed.
Sift through a sieve to get fine powder. Keep aside until used.
Directions for Chicken Thighs Preparation:
In a bowl, add yogurt, curry masala, oil, red chili powder, cumin powder, garlic powder, onion powder, salt, white pepper, lemon juice and whisk into a smooth paste.
Add chicken thighs and marinate for 30 minutes to 2 hours.
Now, add oil in a preheated pan and transfer the marinated chicken thighs into the pan. Cook each side for 3-4 minutes.
Add the leftover marinade over the half cooked chicken thighs and then cook until fully cooked. Add water if needed.
Serve with boiled rice and sprinkle coriander on top. Your Chicken Thighs with Boiled Rice is ready.
