Chicken legs marinated in spicy marination and grilled.SPICY CHICKEN LEG - (Serves - 4)Ingredients8 chicken legs on bone3-4 green chillies2-3 dried red chillies6-7 garlic clovesCrushed black peppercorns to tasteSalt to tasteJuice of 1 lemon 1 inch ginger, peeled2 tablespoons oilChopped spring onion greens for garnishingDip 2 tablespoons blue cheese2 tablespoons hung yogurtΒΌ cup yogurt1 tablespoon chopped spring onion greens + for garnishingMethod1. Make incisions in the chicken legs and put in a bowl.2. Combine together broken green chillies, broken dried red chillies, garlic cloves, crushed peppercorns and salt in a grinder.3. Add lemon juice and salt to chicken legs and mix well.4. Roughly chop ginger, add to grinder and grind to make a smooth paste. 5. Add the paste to marinated chicken legs and mix well.6. Heat oil in a non-stick pan. Place the marinated chicken legs and cook from all sides till golden brown. Cover and cook till chicken is done.7. To prepare dip, mix together blue cheese and hung yogurt in a bowl. Add yogurt and whisk. Add 1 tablespoon spring onion greens and mix well. Put in a serving bowl and garnish with some spring onion greens.8. Garnish with some spring onion greens and serve hot with dip.
