Spicy Chicken Hot Dog Sanjeev Kapoor Khazana

When hunger strikes, is there anything more filling than a lip-smacking hot dog with a lovely cheese sauce on top?

SPICY CHICKEN HOT DOG

Ingredients

4 hot dog buns
Chicken Mixture
250 grams chicken mince
1 tbsp butter
1 tbsp oil
1 bay leaf
1 tbsp chopped garlic
tbsp chopped ginger
2 fresh red chillies, chopped
1 medium onion, chopped
1 small carrot, peeled and chopped
1 tsps red chilli powder
tsp smoked paprika powder
Salt to taste
Crushed black peppercorns to taste
tsp dried mixed herbs
1 cups fresh tomato puree
2 tbsps chopped fresh parsley + to sprinkle
Cheese sauce
cup grated cheddar cheese
2 tbsps butter
2 tbsps refined flour (maida)
1 cups milk
Shredded cabbage as required

Method

1. Heat butter and oil in a nonstick wok. Add bay leaf, garlic, ginger, red chillies and saut for 2 minutes.
2. Add onion, carrot and cook for 2-3 minutes.
3. Add chicken mince and cook on high heat for 3-4 minutes.
4. Add red chilli powder, smoked paprika powder, salt, crushed black peppercorns, dried herbs and mix well.
5. Add tomato puree and mix well. Cover and cook on medium heat for 5-6 minutes. Add parsley and mix well.
6. For cheese sauce, heat butter in a nonstick pan. Add refined flour and saut for a minute.
7. Add milk and cook till thick. Add cheddar cheese and cook till cheese melts.
8. Slit the hot dog buns without cutting through. Drizzle some cheese sauce in the centre.
9. Add some shredded cabbage on top. Add a generous portion of chicken mixture on top.
10. Drizzle some more cheese sauce on top, garnish with parsley and serve hot.
