Spanish recipe: Open-Faced Omelette with button mushrooms, soft cheese and sobrasada

Also known as "Tortilla vaga", that means "Lazy omelette", is very famous in Spain thanks to the chef Sacha Hormachea (Sacha Restaurant in Madrid). Its lazy because the recipe is easy and because you dont need to do the tricky omelet fold.

What ingredients do we need?

We're going to need tetilla cheese, chives, sobrasada, eggs, chive, mushrooms and extra virgin olive oil.
