Boiled spaghetti tossed in spicy arrabiata sauce along with fresh vegetables.

SPAGHETTI WITH ARRABIATA SAUCE

Ingredients

1½ cups boiled spaghetti
4 tablespoons Arrabiata sauce
1-2 tablespoons olive oil + for drizzling
1 small green capsicum, roughly chopped
1 small yellow capsicum, roughly chopped
1 small red capsicum, roughly chopped
5-6 baby corn, cut into pieces
1 small broccoli, separated into florets
1 tablespoon tomato ketchup
Salt to taste
Crushed black peppercorns to taste
2-3 fresh basil leaves, hand torn + for garnishing

Method

1. Heat olive oil in a non-stick pan. Add green, yellow and red capsicums, baby corn, mix and cook for a minute.
2. Add broccoli, mix and cook for 2-3 minutes. Add Arrabiata sauce, tomato ketchup and mix well. Add salt, crushed peppercorns, spaghetti, basil leaves, mix and cook for 2-3 minutes.
3. Garnish with basil leaves, drizzle olive oil on top and serve hot.
