Dr. Pratibha Y Angame - Soya Tikkis in Malwani GravySOYA TIKKIS IN MALWANI GRAVYIngredients1½ cup soya granules, soaked and drained 1 large potato, boiled, peeled and mashed2 tablespoons chopped fresh coriander leaves 2 green chillies, choppedSalt to taste¼ cup grated carrot (optional)2 tablespoons oil + for shallow-frying 1 medium onion, finely chopped ¼ teaspoon turmeric powderMalwani masala 4 tablespoons scraped fresh coconut1½ medium onions, sliced8-10 black peppercorns2-3 green cardamoms3-4 cloves4 Kashmiri dried red chillies, halved ½ inch cinnamon1 tablespoon coriander seeds3 garlic cloves1 inch ginger, chopped 3 tablespoons oilMethod1. Take soya granules in a bowl. Add potatoes, chopper coriander, green chillies, salt and carrot (if using) and mix well. 2. Heat some oil in a non-stick pan. 3. Divide the soya mixture into equal portions and shape them into tikkis.4. Place the tikkis in the pan and shallow-fry till golden and crisp from both sides.5. To make Malwani masala, heat 3 tablespoons oil in another non-stick pan. Add coconut and sauté. 6. Add onions, mix and sauté. Add peppercorns, cardamoms, cloves, dried red chillies, cinnamon, coriander seeds, garlic and ginger, mix and sauté till fragrant and well browned. 7. Remove from heat, cool and grind into a fine paste using water as required.8. Heat 2 tablespoons oil in another non-stick pan. Add onion, mix and sauté well.9. Add turmeric powder, mix and sauté well. Add prepared Malwani masala, mix well and sauté for a minute.10. Add some water and salt, mix well and bring to a boil. Remove from heat.11. Place the fried tikkis in a serving plate. Pour the Malwani gravy on top and serve hot.
